Autumn Soup.

Let’s begin in autumn. My favorite time of year is soon approaching..fairs, apple picking, leaf raking. Ok, maybe not leaf raking, but fall brings a certain calm and introspection I crave after a busy summer. It also brings an end to all the fresh fruit and veggies. I like to stock up at our local farm stand with onions, potatoes, and squash. These are all flavors of fall to me. I love them. So to honor autumn here in the good ol’ USA I have concocted Autumn Soup:

  • 3 medium apples (the sweeter the better) peeled, cored and diced in 1/2″ chunks
  • 2 small or 1 large butternut squash, cut in half and seeded.
  • 2 or 3 carrots peeled and diced
  • 1 small onion (vidalia or any white/yellow onion), peeled, diced
  • butter
  • olive oil
  • chicken stock
  • 1/2 tsp thyme
  • salt and pepper
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1 tbs butter
  • 1 tbs olive oil
  • 2 tbs brown sugar
  • 1/2 cup whole milk
  • chicken stock

Pour 1/4″ water into a large glass baking dish and place butternut squash face down. Bake at 400 or until the squash is soft.

Meanwhile heat dutch oven while you peel and chop apples, carrots and onions. Add  butter and olive oil to the dutch oven at medium high heat. Sautee veggies and fruit until soft. Lower heat to low and cover with chicken stock. Simmer until all is mushy. Add more stock to cover once more and take squash out of oven. Scoop squash out of skin and put directly into the soup. Cover with stock once more and add all the spices. My listed amounts are just guidelines, add and subtract as you wish.  Let it all cook together until it’s mushy like apple sauce. If you have some big chunks mash with a potato masher. Then add the brown sugar and turn off heat for 15-20 mins to cool it all down. Taste and see if you need to add more of this or that. Then add milk and chicken stock to the consistency you want. I also like to use a hand blender to make it smooth. Turn back on the heat just before serving. This should yield about 4 servings.
