Parmesan Fries

I have had a special request for some side dishes. Here is one that is delicious and versatile. Plus it’s awesome for this time of year when root veggies are mostly what’s available.

Parmesan Fries

  • carrots, parsnips, sweet potatoes, or regular potatoes, even zucchini if you like!
  • flour
  • salt and pepper
  • garlic powder
  • shaker Parmesan or something nicer if you like better Parmesan
  • milk

Heat oven to 400. Grease a cookie sheet. Cut veggies into fries or chips depending on which you prefer. Mix salt, pepper, garlic powder flour and parmesan in a bowl. Dip veggies into milk and then toss in flour mixture and place on greased cookie sheet. Bake until veggies are soft, about 20 mins for carrots, parsnip or regular potatoes. About 15 for sweet potatoes or zucchini.
