Apple and Gouda Chicken, with Smashed Cauliflower.

I had a craving for something different tonight, so I made something up! We had all of these things on hand, and I sort of just threw this together, and it was a hit!

Apple and Gouda Chicken

  • 2 boneless, skinless chicken breasts
  • salt and pepper
  • smoked gouda cheese, sliced thin
  • 1 apple (any type), sliced thin
  • bacon

Cut chicken almost in half to flatten out, cover with saran wrap and beat with a frying pan. You could use something else, but hitting things with a frying pan is always more fun. When the chicken breast is thin salt and pepper it. Add four or five apple slices and 2 or 3 slices of cheese depending on how big your gouda is. Then fold over and wrap slices of bacon around the chicken. Bake at 400 for 20 mins.

Smashed Cauliflower

  • Cauliflower
  • butter
  • milk
  • any type of cheese shredded

Boil cauliflower until very soft and drain. Add a pad of butter in the pan and cauliflower back in and put back on burner, still hot but off. Let some of the water cook off. Smash with a masher until it is a consistency you like. Add milk and cheese.
