Tikka Masala.. Taking on Indian.

We are lucky.  We have two kids that love spicy Indian food. Problem is they tend to act out in restaurants and we don’t like that. So I looked online and accumulated a few recipes of our favorite dishes to try and make at home. Being that might spice rack is limited the authenticity may be a bit off, but it sure tastes great to us. Here is our best attempt!

Tikka Masala

Chicken Marinade

1 6oz plain greek yogurt

1 tbs lemon juice

2 tsp cumin

1 tsp cinnamon

1tsp (or more) of cayenne pepper

2tsp black pepper

1 tsp minced or grated ginger

1 tsp salt

chicken breast or chicken thighs cut into bite size pieces, enough to fee 4 people.

Combine all ingredients and marinade for 4-8 hrs. Place on skewers close together.

Sauce

1/4 cup onion

1 clove garlic minced

1 jalapeno or habanero depending on the heat level you like

2 tsp cumin

2 tsp paprika

1 can tomato sauce

1 cup heavy cream

Sautee garlic and jalapeno until soft, do not burn garlic or it will become bitter. Add seasonings. Stir in tomato sauce and heat for a minute or so but do not let it boil. Add cream slowly. While this is reducing turn grill to high heat or place oven on 500. Make sure to oil the grill grates or place tin foil with oil on it on cookie sheet. The yogurt marinade makes a mess. Be sure to cook through until juices run clear.  Once chicken is cooked through take off skewers and put in sauce and cook for 5 minutes. I usually serve with rice and naan.

If you have someone that doesn’t like it too spice make sure to seed the jalapeno or eliminate the cayenne in the marinade.
